Tofu Stir Fry Curry Recipe
A high protein Asian recipe with sunflower oil, cloves garlic - finely chopped, inch ginger - julienned. Ready in 40 min, serves 4.

To begin making the Tofu Stir Fry Curry, first make the red chilli paste, for this soak 3 dried red chilies for 30 mins and grind to a fine paste
tofu - cut into squares(300 grams)red chilli paste(1 tablespoon) - 2
Keep the red chilli paste aside
red chilli paste(1 tablespoon) - 3
Heat oil in a non-stick pan and add ginger, garlic and green chilies
cloves garlic - finely chopped(6)inch ginger - julienned(1)green chillies - slit lengthwise(2)green bell pepper (capsicum) - cut into one inch squares(1) - 4
Saute on high heat for 30 seconds and add the onions
onion - cut into one inch squares(1) - 5
Cook the onions for 2-3 minutes
onion - cut into one inch squares(1) - 6
The onions should start to become translucent but still be crunchy
onion - cut into one inch squares(1) - 7
Add the tofu, bell peppers and other vegetables and stir-fry for 3-4 minutes
tofu - cut into squares(300 grams)green bell pepper (capsicum) - cut into one inch squares(1)mixed vegetables - like broccoli(1/2 cup) - 8
While the vegetables are getting cooked, combine all the ingredients for the curry sauce
mixed vegetables - like broccoli(1/2 cup)light soy sauce(2 tablespoon) - 9
Add the curry sauce to the vegetables and stir to combine, until it starts to become thick
mixed vegetables - like broccoli(1/2 cup)light soy sauce(2 tablespoon) - 10
Keep stirring as you cook on medium heat for a few minutes till you are happy with the consistency of the sauce and turn off the heat
light soy sauce(2 tablespoon) - 11
Check the salt and spices and adjust to suit your taste
salt - to taste - 12
The Tofu Curry is now ready to be served

Serve the Tofu Stir Fry Curry along with a bowl of brown rice and a Beet Carrot and Apple Salad for a quick weeknight dinner
