Spinach Tomato Soup Italian Style Recipe

To begin making the Spinach Tomato Soup Italian Style recipe, heat Olive oil in a pan and once it is hot enough, add crushed garlic and cook for few seconds
spinach - blanched and shredded(2 cups)cloves garlic - crushed(5)extra virgin olive oil(1 tablespoon) - 2
Now add chopped onion into the pan and cook for a minute
onion - finely chopped(1)carrots (gajjar) - chopped into circles(2) - 3
Once the onion has become translucent, we need to add paprika powder, black pepper powder, oregano and give it a stir
onion - finely chopped(1)paprika powder(1/2 tablespoon)dried oregano(1 tablespoon)black pepper powder(1 tablespoon) - 4
Now add blanched spinach, slightly pureed tomatoes, chopped carrots and salt into the pan
onion - finely chopped(1)carrots (gajjar) - chopped into circles(2)spinach - blanched and shredded(2 cups)tomatoes - pureed(3)salt - salt - 5
Mix everything well and cook for few seconds

Add the vegetable stock now and stir it again
vegetable stock(4 cups) - 7
Now you can add white vinegar if you want to give a tangy twist to this soup otherwise you can skip this step
white vinegar - optional(1/2 tablespoon) - 8
Let the soup cook on low heat and keep stirring in between

After 15-20 minutes, you will realise that the soup has started thickening and at this point, you can add the boiled pasta and red chili flakes
red chilli flakes(1/2 tablespoon)penne pasta - boiled(1/2 cup) - 10
Do a taste check and see if you need to add more salt or black pepper as per your taste
black pepper powder(1 tablespoon)salt - salt - 11
Now let the soup cook for another 10 minutes and add baby spinach (Blanched)
spinach - blanched and shredded(2 cups) - 12
Cook for another 5 minutes and your soup is ready
