To begin making the Maharashtrian Kokum Saar Recipe, first add Kokum juice, water and jaggery in a saucepan
kokum (malabar tamarind) - unsweetened juice(3 tablespoon)-1/4 water(2 cup)jaggery - grated(3 tablespoon) - 2
add salt if using unsalted juice
kokum (malabar tamarind) - unsweetened juice(3 tablespoon)salt - as required (if using unsalted juice) - 3
Heat on a low flame till the jaggery dissolves (Do not bring the kokum saar to boil)
kokum (malabar tamarind) - unsweetened juice(3 tablespoon)jaggery - grated(3 tablespoon) - 4
Keep it on low while we prepare the seasoning for the kokum saar
kokum (malabar tamarind) - unsweetened juice(3 tablespoon) - 5
Heat ghee in a small tadka pan
ghee(1 tablespoon) - 6
Add the cumin seeds, hing curry leaves, chillies and mix
cumin seeds (jeera)(2 teaspoon)-3 dry red chillies - broken or 1- green chillies(2)-6 curry leaves(5)coriander (dhania) leaves - chopped(2 teaspoon) - 7
Allow the seasoning to crackle

Take off the heat and pour it over the Kokum Saar
kokum (malabar tamarind) - unsweetened juice(3 tablespoon) - 9
Take the Kokum Saar off the heat, garnish with coriander leaves and serve immediately
kokum (malabar tamarind) - unsweetened juice(3 tablespoon)-6 curry leaves(5)coriander (dhania) leaves - chopped(2 teaspoon) - 10
Serve the Maharashtrian Kokum Saar along with Matki Chi Rassa Bhaji , Steamed Rice and Kachumber Salad for your everyday meal
