To make South India Carrot Porial, first steam the chopped carrot in a pressure cooker with salt and water
carrots - small or long chopped(4)salt - as per taste - 2
Soak the cooker until it comes to 2 cities, take out the pressure and when it becomes soft, keep it on the side

Now to heat it, heat oil in a pan
oil(1 teaspoon) - 4
When it gets hot, add mustard seeds, curry leaves, urad dal and red chillies
mustard(1/2 teaspoon)white urad dal (split)(1/2 teaspoon)curry leaves - broken from the middle(4) - 5
Let it cook for 10 to 15 seconds

After it becomes golden, add asafoetida, turmeric powder, carrots and salt
carrots - small or long chopped(4)turmeric powder(1/2 teaspoon)asafoetida(1/4 teaspoon)salt - as per taste - 7
Cook for a few minutes and garnish it with coconut
coconut - grated(1/4 cup)
