To begin making the Hariyali Pav bhaji recipe, firstly heat oil in a wok/kadhai
pav bhaji masala(1 tablespoon) - 2
Add the cumin seeds, mustard seeds, curry leaves, asafoetida and green chillies
mustard seeds(1 teaspoon)cumin seeds (jeera)(1/2 teaspoon)curry leaves(5)asafoetida (hing)(1/4 teaspoon)green chillies - finely chopped (adjustable)(2)green peas (matar) - boiled(1/2 cup)spinach leaves (palak) - pureed(1/2 cup)red chilli powder(1 teaspoon)-/2 green chutney (coriander & mint)(1 tablespoon)sprig coriander (dhania) leaves - finely chopped(2) - 3
Once it is done, add ginger garlic paste and cook for about 15 seconds

Next, add the onions and let it cook till they become soft and transparent

Now add the potatoes and cook for 2 to 3 minutes
potato (aloo) - boiled and mashed(1) - 6
After 2 to 3 minutes, add tomatoes, cover the pan and cook for about 5 minutes
tomato - finely chopped(1) - 7
Now add the bottle gourd puree, mashed potato and green peas
green chillies - finely chopped (adjustable)(2)potato (aloo) - boiled and mashed(1)green peas (matar) - boiled(1/2 cup)bottle gourd (lauki) - boiled and pureed(1/2)-/2 green chutney (coriander & mint)(1 tablespoon) - 8
Add some water and mash it using a masher

Let it cook for about 5 to 6 minutes

Add all the masalas including salt, red chilli powder, turmeric powder, garam masala and pav bhaji masala

Cook for about 5 minutes and then add the spinach puree and the coriander paste

Let it cook for about 10 to 12 minutes

The next step is to roast the buns

Heat a little butter on a flat pan, sprinkle some pav bhaji masala and chopped coriander leaves
