Vegan Navratan Korma Recipe

To begin making the Vegan Navratan Korma, soak cashews and almonds reserved for the paste in water for 40 minutes
ginger garlic paste(2 tablespoon)-8 cashew nuts - toasted(6)cashew nuts - whole(10) - 2
Grind this to a smooth paste along with poppy seeds and set aside
ginger garlic paste(2 tablespoon)-/2 tablespoons poppy seeds(1) - 3
Chop all the vegetables and gather all the ingredients required for the korma

Steam the vegetables with a pinch of salt until tender, make sure they hold the shape
to 12 green beans (french beans) - cut into 1 inch(10 pieces)inch ginger(1) - 5
Grind the poppy seeds, cashew and almonds into a smooth paste, adding little water
to 12 green beans (french beans) - cut into 1 inch(10 pieces)cauliflower (gobi) - cut into florets(1/2 cup)ginger garlic paste(2 tablespoon)-8 cashew nuts - toasted(6)-/2 tablespoons poppy seeds(1)cashew nuts - whole(10) - 6
Keep the nut-seed mixture aside

In a large pan heat some oil, add cloves, cinnamon, green cardamom and black cardamom, now add sliced onions, ginger and garlic paste and saute this the raw smell disappears, add green chillies and cook briefly
to 12 green beans (french beans) - cut into 1 inch(10 pieces)onions - sliced(2)green chilli(6)ginger garlic paste(2 tablespoon)red chilli powder(1/2 teaspoon)-4 cardamom (elaichi) pods/seeds - powdered(3)black cardamom (badi elaichi)(1)cloves (laung)(3)inch ginger(1)badam (almond) - sliced(1 tablespoon)pistachios - sliced(1 tablespoon) - 8
Let this mixture cool down to room temperature

Now add these ingredients into a mixie jar and grind to smooth
to 12 green beans (french beans) - cut into 1 inch(10 pieces)cauliflower (gobi) - cut into florets(1/2 cup) - 10
Return this gravy into the pan add turmeric powder, red chilli powder and some salt and cook for 3-4 minutes
to 12 green beans (french beans) - cut into 1 inch(10 pieces)cauliflower (gobi) - cut into florets(1/2 cup)green chilli(6)turmeric powder (haldi)(1/2 teaspoon)red chilli powder(1/2 teaspoon)garam masala powder - optional(1/2) - 11
Now to this mixture add the coconut yogurt, coconut milk and the nut-seed paste and mix to well and cook for 4-5 minutes or until the korma thickens
ginger garlic paste(2 tablespoon)coconut yogurt - optional(1 cup)coconut milk - thick(1/2 cup)coconut oil - cold pressed - 12
Add the cooked vegetables, tofu and a cup of water and cook until the korma comes together
tofu - diced(1/2 cup) - 13
This should take around 4-5 minutes

Add little water to loosen the korma if required

Add salt and adjust the seasoning

Finally sprinkle the garam masala if using and give it a stir

In a small pan heat some coconut oil and gently fry cashews and sultanas, turn off the heat add sliced almonds and pistachios and roast for a few seconds
