Roasted Cauliflower Recipe
A vegetarian South Indian Recipes recipe with cauliflower (gobi), garlic - sliced, cumin seeds (jeera) - roasted and crushed. Ready in 40 min, serves 4.

To begin making the roasted cauliflower, first pre-heat the oven to 200 degree celsius
cauliflower (gobi)(2 cups)cumin seeds (jeera) - roasted and crushed(2 teaspoon) - 2
In a mixing bowl, toss together the olive oil, garlic and cauliflower florets
cauliflower (gobi)(2 cups)garlic - sliced(4)extra virgin olive oil(3 tablespoon) - 3
Sprinkle salt as required
salt - to taste - 4
Place these florets on a baking tray and roast till they just soften (about 10-12 minutes)

Take the tray out of the oven

Add the coriander powder, cumin and black pepper powder
cumin seeds (jeera) - roasted and crushed(2 teaspoon)coriander powder (dhania)(1 teaspoon)black pepper powder - or red chilli powder(2 teaspoon)anardana powder (pomegranate seed powder)(1/4 cup) - 7
Mix and place it back in the oven to roast for another 10 to 12 minutes or till the cauliflower is cooked and caramelizes or slightly turns brown
cauliflower (gobi)(2 cups) - 8
Take it out onto a serving dish

Garnish with pomegranate seeds, herbs and drizzle some molasses or honey over it
cumin seeds (jeera) - roasted and crushed(2 teaspoon)anardana powder (pomegranate seed powder)(1/4 cup)tablespoons pomegranate molasses - orhoney (optional but recommended)(2)fresh herbs - handful of herbs of choice like basil - 10
Serve immediately
