Prawn Ghee Roast Recipe
A non-veg Mangalorean recipe with prawns - shelled and deveined, dry red chillies, whole black peppercorns. Ready in 25 min, serves 2.

To begin making the Prawn Ghee Roast recipe, soak the chillies in warm water for 1 hour, drain the water and reserve the chillies
dry red chillies(4)tablespoon tamarind - soaked in /4 warm water(1 cup)red chilli powder(2 teaspoon)tablespoons ghee - plus 1(2 teaspoon) - 2
Clean the prawns, wash and pat them dry
prawns - shelled and deveined(250 grams) - 3
Soak tamarind in 1/4 cup warm water for 10 minutes
tablespoon tamarind - soaked in /4 warm water(1 cup) - 4
Once soaked squeeze the tamarind and extract the pulp
tablespoon tamarind - soaked in /4 warm water(1 cup) - 5
Heat a small fry pan, roast the pepper corns, fenugreek, mustard, fennel and cumin, once the spices stop to splutter, switch off the heat
cumin seeds (jeera)(1/2 teaspoon)mustard seeds(1/4 teaspoon)fennel seeds (saunf)(1/2) - 6
Transfer the spices into a bowl, let it be cool, and grind to make a fine powder
turmeric powder (haldi)(1 teaspoon)red chilli powder(2 teaspoon) - 7
Add the garlic and soaked chillies into a grinder with a splash of water and grind to form a smooth paste
dry red chillies(4)tablespoon tamarind - soaked in /4 warm water(1 cup)red chilli powder(2 teaspoon)cloves garlic(6) - 8
Marinate the prawns with the lime juice, yoghurt, red chilli powder, turmeric and a pinch of salt for 20 minutes
prawns - shelled and deveined(250 grams)turmeric powder (haldi)(1 teaspoon)red chilli powder(2 teaspoon)lemon juice(1/2)salt - as per taste. - 9
Add 2 tablespoons ghee to a pan, place it on medium flame add the prawns in batches
prawns - shelled and deveined(250 grams)tablespoon tamarind - soaked in /4 warm water(1 cup)tablespoons ghee - plus 1(2 teaspoon) - 10
Fry from both the sides until light brown

Remove the prawns from pan
prawns - shelled and deveined(250 grams) - 12
Add garlic chilies paste into the remaining ghee, fry for 2 minutes, add prawns, roasted dry spice powder, remaining marination masala and salt, mix well and cook until oil gets separated
prawns - shelled and deveined(250 grams)turmeric powder (haldi)(1 teaspoon)red chilli powder(2 teaspoon)cloves garlic(6)tablespoons ghee - plus 1(2 teaspoon)salt - as per taste. - 13
Add tamarind pulp, curry leaves and cook for 5 minutes on low flame, if required sprinkle some water
tablespoon tamarind - soaked in /4 warm water(1 cup) - 14
Add remaining 1 teaspoon ghee on top, mix and switch off the gas
tablespoons ghee - plus 1(2 teaspoon) - 15
Transfer the Prawn Ghee Roast into a serving bowl

Serve Prawn Ghee Roast as a side dish along with Mangalorean Style Kuvalyacho Pollav and Steamed Rice for a weekday meal
