To begin making the Kerala Palada Pradhaman recipe, first slow boil milk and 1/2 cup sugar on low flame until it reduces lesser than half the quantity
ada(1 cup)liter milk - full cream(2)sugar(3/4 cup) - 2
I used pressure cooker with weight on for about 60 minutes and slow cooked/boiled the milk
liter milk - full cream(2) - 3
The milk turned slightly pink in colour by doing this
liter milk - full cream(2) - 4
Cook ada as per packet instructions
ada(1 cup) - 5
Once cooked, drain the ada and rinse it in cold water to stop cooking
ada(1 cup) - 6
Heat ghee in a pan
ghee(1 tablespoon) - 7
Add 1/4 cup sugar and saute
sugar(3/4 cup) - 8
Wait till sugar melts and starts to turn slightly brown
sugar(3/4 cup) - 9
Add cooked ada and saute for about 2 minutes
ada(1 cup) - 10
Add about 1 to 1-1/2 cup boiled milk
liter milk - full cream(2) - 11
Mix well
- 12
If it need more milk add it
liter milk - full cream(2) - 13
Sprinkle cardamom powder, mix well
cardamom powder (elaichi)(1/2 teaspoon) - 14
Serve hot or cold

Either ways it tastes delicious

Serve Kerala Palada Pradhaman after your meal of Keerai Sambar, Beetroot Thoran and Steamed Rice
