To make Kashmiri Dahi Brinjal Recipe, first of all put the brinjals in salt water and keep it aside for 10 minutes

Beat the curd in a bowl and keep it well

Heat mustard oil in a pan

After heating, add cardamom, asafoetida and cook it for 10 seconds

Remove the bengal from the water and put it in the pan

Add a little salt and cook until the eggplants are well cooked

After the brinjal is cooked add fennel powder, ginger powder, turmeric powder and red chili powder

Cook for 1 to 2 minutes

Now add the beaten curd and cook for 4 to 6 minutes on low flame
