Bengali Sukto Recipe - Mixed Vegetable Curry

To begin making the Sukto Recipe, in a frying pan heat mustard oil
mustard seeds - paste(1 tablespoon)mustard oil - as required - 2
Fry badi/dried lentil dumplings until it turns light brown in colour
badi (wadi) - as required - 3
In same oil fry bitter gourd slices until crispy
ridge gourd (turai/ peerkangai) - diced(1/2 cup) - 4
Drain in a paper towel and keep aside

Add 1 tablespoon more oil on frying pan and heat it up, then roast red chilli, bay leaf and methi seeds
mustard seeds - paste(1 tablespoon)poppy seeds - paste(2 tablespoon)methi seeds (fenugreek seeds)(1 teaspoon)dry red chilli(1)bay leaf (tej patta)(1) - 6
After it starts crackling add all vegetables including sweet potato, brinjal, kaddu, drumstick, raw papaya, plantian stem and ridge gourd

Cook for about 2 minutes, add salt and turmeric powder
turmeric powder (haldi)(2 teaspoon)cumin powder (jeera)(1 teaspoon)salt - for seasoning - 8
Cook for 5 minutes on low heat

Add poppy seed paste, mustard seeds paste and fry for 5 minutes

Add cumin powder and sugar
sugar(1 tablespoon)turmeric powder (haldi)(2 teaspoon)cumin powder (jeera)(1 teaspoon) - 11
Add 1 cup of water, then covered and cook for 15 minutes or until vegetables are well cooked

After 15 minutes add crispy bitter gourd slices and badi
ridge gourd (turai/ peerkangai) - diced(1/2 cup)badi (wadi) - as required - 13
Let it cook for about a minute

After a minute, add the ginger paste
mustard seeds - paste(1 tablespoon)poppy seeds - paste(2 tablespoon)ginger - paste(1 tablespoon) - 15
Cook for 5 minutes, then add ghee and milk
milk(1/2 cup)ghee(1 tablespoon) - 16
Let it boil, as it start boiling, switch of the gas

It tastes best when it is cold and served with steamed rice
