To begin making the Tambdi Bhaji Recipe (Goan Style Red Amaranth Stir Fry), clean wash and chop the red amaranth leaves roughly and keep aside

Heat oil in a heavy bottomed pan, add the cumin seeds, curry leaves and let it splutter

Add the garlic cloves and saute for a minute
cloves garlic - finely chopped(4) - 4
Add the chopped onion, green chillies and saute till onions turn translucent
onion - finely chopped(1)cloves garlic - finely chopped(4)green chillies - finely chopped(2) - 5
Add the chopped amaranth, season with salt and let it cook
red amaranth leaves - tightly packed(3 cups)onion - finely chopped(1)cloves garlic - finely chopped(4)green chillies - finely chopped(2)salt - to taste - 6
This will take around 5 minutes

Once the water is all dried out, add the grated coconut, mix well and switch off the heat

Serve Tambdi Bhaji along with Goan Style Mushroom Vindaloo and Steamed Rice for a weekday meal
