To begin making the Sabudana Vada Recipe, prep all the ingredients and keep them ready
sabudana (tapioca pearls) - soaked overnight(1 cup) - 2
Place a kadai with oi on heat for deep frying the vadas
sunflower oil - for deep frying - 3
For the Sabudana Vada:Combine all the ingredients like the sabudana pearls, potato, roasted peanuts, cumin seeds, green chillies, sugar, lemon juice, coriander leaves and salt to taste in a bowl
sabudana (tapioca pearls) - soaked overnight(1 cup)roasted peanuts (moongphali) - lightly crushed(1/4 cup)green chillies - finely chopped(4)cumin seeds (jeera)(1 teaspoon)sugar - coarsely ground(1/4 teaspoon)lemon juice(1/2 teaspoon)coriander (dhania) leaves - finely chopped(3 tablespoon)salt - to tastepotato (aloo) - peeled and mashed(1)roasted peanuts (moongphali) - coarsely ground(2 tablespoon)green chillies - finely chopped(2)sugar(1/2 teaspoon)salt - to taste - 4
Mix well so that everything comes together to form a dough

Make lemon sized balls from the dough and flatten into patties
lemon juice(1/2 teaspoon) - 6
Deep fry on medium flame till golden brown
sunflower oil - for deep frying - 7
The vadas should be crisp on the outside but also properly cooked inside , adjust the heat accordinglyDrain on an absorbent paper and serve immediately with chutney of choice

For the Curd chutney:Whisk the curd
curd (dahi / yogurt)(3/4 cup) - 9
Add potatoes,roasted peanuts, green chillies, sugar and salt, mix and serve immediately with the sabudana vada
