To begin making the Odia Style Chuin Aloo Besara recipe, soak the mustard seeds, garlic, dry chilli and cumin seeds in half a cup of water and keep aside for at least 15 minutes
mustard seeds(2 teaspoon)cumin seeds (jeera)(1 teaspoon)cloves garlic(7)mustard oil(4 tablespoon) - 2
Take and wash all the drumsticks, peel off the outer layer and cut it into 3 to 4 inch pieces
drumstick - cut into 3 inch(5 pieces) - 3
Cut potatoes into thick slices (1/2 inch), keep aside along with drumsticks
potatoes (aloo) - chopped(2)drumstick - cut into 3 inch(5 pieces) - 4
Drain the soaked mustard seeds, garlic, dry chilli and cumin seeds
mustard seeds(2 teaspoon)cumin seeds (jeera)(1 teaspoon)cloves garlic(7)mustard oil(4 tablespoon) - 5
Grind very well into a fine paste by adding a little water
drumstick - cut into 3 inch(5 pieces) - 6
Take a heavy bottomed pan, heat the mustard oil
mustard seeds(2 teaspoon)mustard oil(4 tablespoon) - 7
Add panch phoran & allow spluttering
panch phoran masala(1 teaspoon) - 8
Add potatoes along with turmeric powder and stir fry them for around 3 minutes
potatoes (aloo) - chopped(2)turmeric powder (haldi)(1 teaspoon) - 9
Next add the drumsticks and fry for another 3 minutes
drumstick - cut into 3 inch(5 pieces) - 10
Then add the ground paste and mix well until the vegetables are coated with it

Add 1 cup of water and salt
salt - as needed - 12
Cover and cook until the potatoes are cooked or till all the water dries out
potatoes (aloo) - chopped(2) - 13
Serve hot
