To begin making the Sunny Side Up Egg Curry Masala Recipe, preheat a pan with oil over medium heat

Once the oil is hot, add the onions and cook till onion turns soft and translucent

Next, add red chilli powder, turmeric powder, coriander powder, salt and saute until the spice powders are well combined

Add in the tomatoes and give it a good mix

Cover the pan with a lid and let the gravy cook for about 5 minutes

After 5 minutes, add in the coconut milk and mix well

Keep the heat low and let the Egg Curry masala come to a boil

Add water to adjust to the consistency of your choice and let it cook for another 5 minutes
