Creamed Spinach Recipe

To begin making the Creamed Spinach first blanch the spinach leaves in boiling water till they just wilt (about a minute)
sprig spinach leaves (palak) - washed(5)tablespoons cheddar cheese - or cream cheese (optional)(3) - 2
Drain in a colander and rinse with cold water

Squeeze out the water and roughly chop the spinach

In a pan heat the butter

Add garlic and onions and sauté till the onions just soften

Sprinkle some salt and pepper

Add the flour, stir and cook for a minute
tablespoons all purpose flour (maida)(2) - 8
Gradually whisk in the milk
milk - (or use half milk and half cream)(2 cups) - 9
Cook stirring till it thickens

Add the mustard powder and cheese or cream cheese and mix
mustard powder(1 teaspoon)tablespoons cheddar cheese - or cream cheese (optional)(3) - 11
Stir in the spinach, nutmeg and cook for a few seconds

Serve hot
