Beetroot Thoran Recipe
A vegetarian South Indian Recipes recipe with beetroot - very finely chopped or grated, fresh coconut - grated, mustard seeds. Ready in 50 min, serves 4.

To begin making the Beetroot Thoran recipe, In a non stick wok, add 2 tablespoons coconut oil and saute the finely chopped beetroot for a while
beetroot - very finely chopped or grated(500 grams)fresh coconut - grated(1 cup)coconut oil - as required - 2
Add 1 cup water or more and cook the beetroot till soft with lid closed
beetroot - very finely chopped or grated(500 grams)water(1 cup) - 3
Turn off the gas and drain the water
water(1 cup) - 4
You can collect the water and later use it in making some curry or stew
sprig curry leaves(1)water(1 cup) - 5
In the same wok again heat 2 tablespoon coconut oil and add mustard seeds, urad dal, curry leaves and dry red chili
fresh coconut - grated(1 cup)mustard seeds(1 teaspoon)white urad dal (split)(1 tablespoon)sprig curry leaves(1)coconut oil - as required - 6
Saute them till mustard crackles
mustard seeds(1 teaspoon) - 7
Now add the cooked beetroot and fry for some time till the moisture starts absorbing
beetroot - very finely chopped or grated(500 grams) - 8
Add salt, red chili powder, turmeric, coriander powder and stir nicely
salt - as requiredred chilli powder(1 teaspoon)turmeric powder (haldi)(1 teaspoon)-/2 coriander powder (dhania)(1 teaspoon) - 9
Adjust oil if required and close the lid to cook for another 5 to 6 minutes
salt - as requiredcoconut oil - as required - 10
Meanwhile add coconut and green chilies to a mixer and grind coarsely
fresh coconut - grated(1 cup)green chillies - slit(2)coconut oil - as required - 11
Once the beetroot thoran is done, turn off the gas and garnish with the freshly ground coconut and chilli
beetroot - very finely chopped or grated(500 grams)fresh coconut - grated(1 cup)red chilli powder(1 teaspoon)coconut oil - as required - 12
Serve Beetroot Thoran with hot steamed rice and keerai sambar for a perfect South Indian meal
