Kadhai Tofu Sabji Recipe

To begin making the Kadai Tofu Sabji, first make the dry masala
tofu - firm(250 grams) - 2
In a small pan, dry roast the coriander seeds, peppercorns, fennel seeds, cumin seeds, red chillies, tejpatta and black cardamom
green bell pepper (capsicum) - diced(1)cumin seeds (jeera)(1 teaspoon)coriander (dhania) leaves - as requiredcoriander (dhania) seeds(2 teaspoon)to 6 whole black peppercorns(5)fennel seeds (saunf)(1 teaspoon)cumin seeds (jeera)(1 teaspoon)teaspoons anardana powder (pomegranate seed powder)(1)to 4 dry red chilli(3)black cardamom (badi elaichi)(1) - 3
Cool and coarsely grind it in a blender along with the Anardana and dry mango powder
turmeric powder (haldi)(1/2 teaspoon)teaspoons anardana powder (pomegranate seed powder)(1)amchur (dry mango powder)(1/2 teaspoon) - 4
Now we will make the Kadai Tofu SabjiIn a kadai/wok, heat the oil
tofu - firm(250 grams) - 5
Add the cumin seeds and let it splutter
cumin seeds (jeera)(1 teaspoon)coriander (dhania) seeds(2 teaspoon)fennel seeds (saunf)(1 teaspoon)cumin seeds (jeera)(1 teaspoon)teaspoons anardana powder (pomegranate seed powder)(1) - 6
Once done add the onion and the ginger and garlic paste and sauté for a few seconds till the onion becomes translucent
onion - diced(1)garlic - paste(1 teaspoon)ginger - paste(1 teaspoon) - 7
Once the onions have turned translucent add the turmeric powder, tomato puree and cook for 1 to 2 minutes
onion - diced(1)turmeric powder (haldi)(1/2 teaspoon)teaspoons anardana powder (pomegranate seed powder)(1) - 8
Add 2 to 3 teaspoons of the freshly ground masala and kasuri methi, mix well to combine
kasuri methi (dried fenugreek leaves) - crushed(1 teaspoon)teaspoons anardana powder (pomegranate seed powder)(1) - 9
Once done add the capsicum and stir fry for a few seconds

Add the Tofu cubes, sprinkle salt and sugar
tofu - firm(250 grams)sugar(1/2 teaspoon)salt - to taste - 11
Mix nicely so that the masala coats the Tofu cubes

Cook for another minute

Garnish with coriander leaves and transfer Kadai Tofu Sabji to a serving bowl,it is ready to be served
